Hi! I’m glad you’re here. I’m Lauren, a holistic Registered Dietitian Nutritionist and the founder of Planting Roots Nutrition. It was during my six very transformative years living in Asheville, North Carolina that I finally found the courage and inspiration to start my own business and I will be forever grateful to the community that helped me get there. Life has brought me back to my roots in the Midwest and I currently operate out of Minneapolis, Minnesota (and am loving everything about it!). Some of my favorite things in life include matcha lattes, being quiet in nature, jamming out while cooking, laughing so hard it makes me cry, and a really good cocktail. Many assume as a dietitian that I am the “food police,” but it really just means that I’m super obsessed with learning and talking about the relationship between food and health with anyone that is willing to geek out with me. It also means I received a Bachelor’s degree in Dietetics (aka nutrition) from Iowa State University, completed an ACEND-accredited supervised practice internship in Illinois, and passed an exam to become nationally credentialed through the Commission on Dietetic Registration. To fulfill my love for functional nutrition after some personal health experiences, I have also received my Master’s in Human Nutrition and Functional Medicine from the University of Western States. I am 100% a lifelong learner and am constantly finding new programs and webinars to immerse myself in.
I want you to know that my number one mission is to empower you to confidently move forward in living a healthier life that is tailored to YOUR body’s individual needs.
Why is taking a tailored and individualized approach with each and every person super important? Well, take me for example. I am a woman. I have two autoimmune diseases and PCOS. I take some targeted supplements and a medication that dictates when I can eat certain foods and nutrients. I love to exercise, but my body no longer tolerates exercise in the morning. I have a family history of high cholesterol. Dairy gives me dermatitis on my hands in the winter, but not in the summer. I can’t function on less than 8 hours of sleep. I find I get a little hangry if I go too long without eating, and as much as I want to, I just really don’t like kimchi. ALL of these things I just mentioned influence my personal nutrition approach and how I might go about getting there. There is not a good one-size-fits-all approach and there never will be!
